Ingredients
3 cups water
1 1/2 cups uncooked white rice (or use pre-cooked rice)
4 tablespoons vegetable oil
1 cup bean sprouts
1/2 cup chopped onion
1 1/2 cups cooked shrimp (peeled and deveined)
2 eggs, beaten
1/4 cup chopped green onions
4 tablespoons soy sauce
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon sesame oil
Directions
- Bring water to a boil in a saucepan, add the rice, cover, and cook for about 20 minutes until tender. Allow it to cool completely before using.
- Heat a large skillet or wok over medium-high heat for about 2 minutes.
- Add vegetable oil, then sauté the chopped onion and bean sprouts for around 3 minutes until slightly softened.
- Add the cooked rice and shrimp to the pan, stirring and cooking for another 3 minutes.
- Push the mixture to one side of the pan and pour in the beaten eggs. Scramble them until cooked.
- Mix the eggs into the rice, then add green onions, soy sauce, salt, black pepper, and sesame oil.
- Stir everything together and cook for 3 to 4 minutes until evenly combined and heated through.
- Serve hot.
