1 tablespoon bacon drippings or oil

Directions

• Heat bacon drippings or oil in a large pan over medium heat.
• Add the chopped onion and cook for about 5 minutes until soft and translucent.
• Place the sauerkraut in a bowl, rinse it lightly, and squeeze out the excess liquid.
• Add the sauerkraut to the pan with the onions.
• Pour in the chicken stock and cooking sherry.
• Stir in the brown sugar and caraway seeds.
• Mix everything thoroughly to combine the flavors.
• Lower the heat and let it simmer for 30 to 40 minutes.
• Stir occasionally until most of the liquid reduces and the flavors deepen.
