Ingredients
For The Grits:
2 ½ cups chicken broth, divided
2 cups whole milk
4 tablespoons butter, divided
¾ cup stone ground grits
1 cup sharp Cheddar cheese, shredded
Salt, to taste
For The Shrimp:
4 strips bacon
1 pound jumbo shrimp, peeled and deveined
Black pepper, to taste
Green onions, thinly sliced, optional
Directions
- In a medium saucepan, combine 2 cups of chicken broth, milk, 3 tablespoons of butter, and a pinch of salt. Bring to a gentle boil over medium heat.
- Slowly whisk in the grits and reduce the heat to low. Simmer for 10 to 15 minutes, stirring occasionally, until thick and creamy. Remove from heat and stir in the shredded Cheddar cheese until fully melted and smooth.
- Meanwhile, cook the bacon in a large skillet until crisp. Transfer to paper towels to drain, then crumble once cooled. Leave about 2 tablespoons of bacon grease in the skillet.
- Lightly season the shrimp with salt and black pepper. Add them to the hot skillet and cook for about 2 minutes per side, or until pink and cooked through.
- Pour in the remaining ½ cup chicken broth and add the final tablespoon of butter. Stir until the butter melts and forms a light, flavorful sauce.
- Spoon the creamy grits into serving bowls. Top with the shrimp and pan sauce, then sprinkle with crumbled bacon and green onions if desired. Serve immediately while warm.
