Ingredients

  • 1 pound beef short ribs
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons all purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, sliced
  • 1 clove garlic, minced
  • 1 (12 fluid ounce) bottle stout beer
  • 1 cup beef stock

Directions

  • Season the beef short ribs with salt and ground black pepper. Coat the ribs lightly with flour and shake off any excess.
  • Heat olive oil and butter in a Dutch oven or large heavy pot over medium high heat. Add the ribs and cook until browned on all sides, about 5 minutes per side. Remove the ribs and set them aside.
  • Add the sliced onion and minced garlic to the same pot. Cook and stir for about 5 minutes until the onion becomes soft and fragrant.
  • Return the browned ribs to the pot. Pour in the stout beer while scraping the browned bits from the bottom of the pot.
  • Add the beef stock and stir gently to combine the ingredients.
  • Cover the pot and reduce the heat to low. Allow the ribs to simmer slowly for about 2 hours until the meat becomes very tender.
  • Once cooked, serve the short ribs with the flavorful sauce from the pot.
