Ingredients
1 (9-inch) pie crust (store-bought or homemade)
8 slices bacon, chopped
1/2 cup chopped onion
1/2 cup chopped leeks (optional)
3 large eggs
2 egg yolks
1 cup heavy cream
3/4 cup milk
1 teaspoon fresh thyme
3/4 cup shredded Gruyère cheese
Salt and black pepper to taste
Pinch of cayenne pepper (optional)

Directions
- Preheat the oven to 220°C (425°F). Place the pie crust into a dish and refrigerate it for about 20 minutes.
- Line the crust with foil and fill it with baking weights, then bake for 7 minutes. Remove the weights and bake for an additional 5 minutes until lightly golden.
- In a skillet, cook the chopped bacon until crisp, then remove and set aside. Using the same pan, sauté the onion and leeks until soft and slightly browned.
- Lower the oven temperature to 165°C (325°F).
- In a mixing bowl, whisk together the eggs, egg yolks, cream, and milk. Stir in thyme, salt, pepper, and cayenne if using.
- Spread the cooked onion mixture and half of the bacon over the crust. Sprinkle cheese on top, then pour in the egg mixture. Finish with the remaining bacon and cheese.
- Bake for 40 to 45 minutes, until the filling is set but still slightly soft in the center.
- Allow the quiche to rest for 15 to 20 minutes before slicing and serving.
