Ingredients

1 1/2 lbs ground beef
1 yellow onion, finely minced
4 cloves garlic, minced
14 ounces diced tomatoes
1/2 cup raisins
1 cup beef broth
3/4 cup manzanilla olives
1 potato, peeled and cubed
2 carrots, cubed
3/4 cup green peas
3 tablespoons olive oil
Salt and black pepper to taste

Directions

Heat the olive oil in a large pot over medium heat.
Add the minced onion and garlic, cooking until softened and aromatic.
Add the ground beef and cook until browned, breaking it apart as it cooks.
Pour in the diced tomatoes, beef broth, and raisins, then mix well.
Bring the mixture to a boil, then cover and let it simmer for about 15 minutes.
Add the olives, potatoes, carrots, and green peas.
Stir, cover again, and cook for another 10 to 12 minutes until the vegetables are tender.
Season with salt and black pepper according to taste.
Cook for an additional 3 minutes, then remove from heat.
