Ingredients
- 3 tablespoons canola oil
- 6 green onions, sliced, white parts and tops separated
- 2 cloves garlic, crushed
- 1 shredded, cooked whole chicken breast
- Salt to taste
- Pepper to taste
- 1 cup salsa
- 1/2 (12 ounce) package tortilla chips
- 1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
- 1/2 large tomato, diced
Directions
- Preheat the oven to 350°F (175°C) and gather all ingredients.
- Heat canola oil in a deep 12 inch skillet over medium heat.
- Add the white parts of the green onions and crushed garlic, then cook and stir until the onions become tender.
- Add the shredded chicken to the skillet and season with salt and pepper. Toss well to coat.
- Stir in the salsa and mix until the chicken is evenly coated with the sauce.
- Arrange tortilla chips evenly on a large baking sheet.
- Spoon the chicken mixture over the tortilla chips and spread it evenly.
- Sprinkle the shredded Cheddar and Monterey Jack cheese blend over the top, then add the diced tomato.
- Bake in the preheated oven for about 10 minutes or until the cheese is completely melted.
- Remove from the oven and sprinkle the green onion tops over the nachos before serving.
