Ingredients

1 cup white vinegar
1 cup water
1 cup white sugar
1 cup fresh cranberries
2 cardamom pods, lightly crushed
4 whole allspice berries, crushed
1/4 (1 inch) piece cinnamon stick
Ice cubes
8 fluid ounces ginger beer
2 fluid ounces club soda

Directions

  • Add the vinegar, water, and sugar to a saucepan and warm over medium-high heat.
  • Stir in the cranberries, cardamom, allspice, and cinnamon, then bring the mixture to a boil.
  • Cover the pot and continue cooking for 5 to 10 minutes, until the cranberries start to burst.
  • Stir gently, reduce the heat, and let the mixture simmer until the sugar is fully dissolved and the cranberries have released their juices, about 10 minutes.
  • Remove the saucepan from heat and let the mixture rest for 15 minutes to deepen the flavors.
  • Strain the liquid into a clean container, seal it, and refrigerate until chilled.
  • To prepare each mocktail, fill a glass halfway with ice. Add 1 fluid ounce of the cranberry mixture, 4 fluid ounces of ginger beer, and 1 fluid ounce of club soda.
  • Stir gently and serve right away.
