Ingredients
- 1 ½ cups long-grain white rice
- ¼ cup vegetable or canola oil
- 1 teaspoon minced garlic
- ¼ medium onion, finely diced
- ¼ cup tomato sauce
- 2 teaspoons tomato bouillon
- ¼ teaspoon salt
- 1 diced carrot
- ½ cup peas
- 3 cups water
- 1–3 whole serrano peppers (optional)
Directions
- Rinse the rice under running water until it becomes clear.
- Heat oil in a large pan over medium-high heat. Add rice and toast for about 10 minutes until golden.
- Stir in tomato sauce, garlic, and onion. Mix well.
- Add tomato bouillon, salt, carrots, peas, water, and serrano peppers (optional).
- Bring to a boil, cover, then reduce heat to low. Cook for 20 minutes until liquid is absorbed.
- Remove from heat, rest for 5 minutes, then gently fluff with a fork.
