Ingredients
- 1 tablespoon olive oil
- ½ pound smoked sausage, sliced
- 1 large onion, chopped
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- Salt to taste
- ½ teaspoon Cajun seasoning, or to taste
- 1 cup uncooked white rice
- 1 (14.5-ounce) can diced tomatoes with juice
- 1 tablespoon minced garlic
- 2 cups chicken broth
- 3 bay leaves
- ¼ teaspoon dried thyme
- 1 pound medium shrimp, peeled and deveined
Directions
- Heat olive oil in a large pot over medium heat. Add sausage and cook for 2 minutes.
- Add onion, bell pepper, and celery. Season with salt and Cajun seasoning. Cook 6–8 minutes until vegetables soften.
- Stir in rice, then add tomatoes with juice, garlic, broth, bay leaves, and thyme. Bring to a simmer.
- Reduce heat to medium-low, cover, and cook for 20 minutes.
- Stir in shrimp and cook uncovered for about 10 minutes until shrimp turn pink.
- Remove from heat and rest for 5 minutes. Discard bay leaves before serving.
