Ingredients

  • 5 1/2 ounces manicotti pasta
  • 1 pint part-skim ricotta cheese
  • 8 ounces shredded mozzarella cheese
  • 3/4 cup grated Parmesan cheese, divided
  • 2 large eggs
  • 1 teaspoon dried parsley
  • Salt to taste
  • Ground black pepper to taste
  • 1 (16 ounce) jar spaghetti sauce

Directions

  • Preheat the oven to 350°F (175°C) and prepare all ingredients.
  • Bring a large pot of salted water to a boil and cook the manicotti pasta for about 10 to 12 minutes until al dente.
  • Drain the pasta and rinse it gently with cold water.
  • In a large mixing bowl, combine ricotta cheese, mozzarella cheese, 1/2 cup Parmesan cheese, eggs, dried parsley, salt, and black pepper. Mix everything well until the filling becomes smooth and evenly blended.
  • Spread about 1/2 cup of spaghetti sauce across the bottom of a baking dish.
  • Fill each cooked manicotti shell with around 3 tablespoons of the prepared cheese mixture.
  • Arrange the stuffed pasta shells in the baking dish over the sauce.
  • Pour the remaining spaghetti sauce evenly on top of the stuffed manicotti.
  • Sprinkle the remaining Parmesan cheese over the top of the dish.
  • Bake in the preheated oven for about 45 minutes until the sauce is bubbling and the pasta is fully heated.
  • Remove from the oven and let the manicotti rest for a few minutes before serving.
