Ingredients
• 4 lamb chops (about 4 ounces each)
• 1 tablespoon olive oil
• 1 clove garlic, minced
• ½ tablespoon crushed fresh rosemary leaves
• Sea salt, to taste
• Freshly ground black pepper, to taste
• ¼ cup mint jelly for serving
Directions
- Preheat the oven to 425°F (220°C).
- Remove excess fat from the lamb chops while leaving a small amount to keep the meat flavorful. Brush each chop lightly with olive oil.
- Season the lamb chops evenly with minced garlic, crushed rosemary, sea salt, and black pepper.
- Arrange the seasoned chops in a cast iron skillet or another oven-safe pan.
- Cook the lamb chops in the preheated oven for about 8 to 10 minutes until they are fully cooked. The internal temperature should reach about 140°F (60°C) for medium well.
