Ingredients

• 1 tablespoon olive oil
• 2 pounds ground beef
• 1 large onion, diced
• 4 cloves garlic, minced
• 2 bay leaves
• 2 tablespoons paprika
• 2 teaspoons Italian seasoning
• 2 teaspoons kosher salt
• 1/2 teaspoon ground black pepper
• 1 pinch cayenne pepper
• 1 quart chicken broth or water
• 1 jar marinara sauce (24 ounces)
• 1 can diced tomatoes (15 ounces)
• 1 cup water
• 2 tablespoons soy sauce
• 2 cups elbow macaroni
• 1/4 cup chopped parsley
• 1 cup shredded white cheddar cheese (optional)

Directions

  • Heat the olive oil in a large pot over medium high heat. Add the ground beef and diced onion, cooking while stirring until the beef is fully browned and the onion becomes soft and translucent. Continue cooking until most of the liquid evaporates.
  • Add the minced garlic, bay leaves, paprika, Italian seasoning, salt, black pepper, and cayenne pepper. Stir well and cook for a few minutes so the spices release their aroma and flavor.
  • Pour in the chicken broth, marinara sauce, and diced tomatoes. Add one cup of water and mix everything thoroughly. Stir in the soy sauce and bring the mixture to a gentle simmer. Lower the heat and allow the sauce to cook for about 30 minutes so the flavors develop.
  • Raise the heat slightly and bring the mixture back to a simmer. Add the elbow macaroni and cook while stirring occasionally until the pasta becomes tender.
  • Remove the bay leaves, then mix in the chopped parsley and shredded cheddar cheese if desired. Cover the pot and allow the goulash to rest for a few minutes before serving.
