Ingredients

  • ½ cup extra-virgin olive oil
  • 2 garlic cloves, finely minced
  • 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried)
  • 1 tablespoon chopped fresh thyme (or 1 teaspoon dried)
  • ¼ teaspoon freshly ground black pepper
  • 1 cup lukewarm water (110°F–115°F)
  • 2 ¼ teaspoons instant yeast (1 packet)
  • ¼ teaspoon sugar, honey, or maple syrup
  • 2 ½ cups all-purpose flour
  • 1 teaspoon fine sea salt

Directions

  • In a skillet, warm olive oil with garlic, rosemary, thyme, and pepper over low heat for 5–10 minutes until aromatic. Do not brown the garlic. Let cool.
  • Combine warm water, yeast, and sugar in a bowl. Stir and let rest for 5 minutes.
  • Add 1 cup flour and ¼ cup infused oil to the yeast mixture. Stir lightly and rest for 5 minutes.
  • Mix in remaining flour and salt, then knead 10–15 times until smooth.
  • Transfer dough to an oiled bowl, cover, and let rise for 1–2 hours or until doubled.
  • Preheat oven to 450°F (232°C).
  • Oil a 9×13-inch baking sheet with 2 tablespoons infused oil.
  • Spread dough into the pan using your hands. Dimple the surface with your fingertips.
  • Drizzle remaining infused oil on top. Let rise for 20–30 minutes.
  • Bake for 15–20 minutes until golden brown. Cool slightly before slicing and serving.
