• 4 (6 ounce) filet mignon steaks
• Seasoned salt to taste
• Cracked black pepper to taste
• 1/4 cup extra virgin olive oil
• 1/4 cup balsamic vinegar
• 1 tablespoon Dijon mustard
• 2 teaspoons dried rosemary
• 1 tablespoon unsalted butter
• 2 cups sliced onions
• 1 teaspoon white sugar
• 4 ounces blue cheese, crumbled

Directions

  • Season the filet mignon steaks with seasoned salt and cracked black pepper. Arrange the steaks in a large dish in a single layer.
  • In a small bowl, mix olive oil, balsamic vinegar, Dijon mustard, and dried rosemary until well combined. Pour the marinade over the steaks and turn them so they are fully coated. Let the steaks marinate for about 30 minutes to absorb the flavors.
  • While the steaks are marinating, melt the butter in a skillet over medium heat. Add the sliced onions and cook until they start to soften. Sprinkle in the sugar and continue cooking, stirring occasionally, until the onions turn golden and caramelized. Set them aside once done.
