Ingredients
2 teaspoons olive oil
4 pounds boneless chuck roast
1 onion, chopped
2 cloves garlic, minced
2 bay leaves
1 teaspoon salt
½ teaspoon freshly ground black pepper
Directions
Preheat the oven to 325°F (165°C). Heat a Dutch oven or heavy oven-safe pot over medium-high heat and add olive oil. Sear the chuck roast for about 4 minutes on one side, then turn and sear the remaining sides until well browned. Remove the roast and set aside. Place the chopped onion, garlic, and one bay leaf in the bottom of the pot, seasoning with salt and pepper. Return the roast to the pot, place the remaining bay leaf on top, cover, and transfer to the oven. Cook for 30 minutes, then reduce the oven temperature to 300°F (150°C) and continue cooking until the meat is fork-tender, about 1½ hours more. Remove from the oven and let the roast rest before slicing and serving.
