Ingredients

• 1 onion, chopped
• 1 tomato, chopped
• 1 inch piece fresh ginger, peeled and chopped
• 4 cloves garlic, chopped
• 1 green chile pepper, seeded and chopped (optional)
• 3 tablespoons olive oil
• 2 fresh bay leaves
• 1 teaspoon chili powder
• 1 teaspoon coriander powder
• 1 teaspoon garam masala
• 1/2 teaspoon turmeric powder
• Salt to taste
• Water as needed
• 1 (15 ounce) can chickpeas, drained
• 1 teaspoon fresh cilantro leaves for garnish

Directions

  • Place the chopped onion, tomato, ginger, garlic, and green chile pepper into a food processor and blend until a smooth mixture forms.
  • Warm olive oil in a large skillet over medium heat.
  • Add the bay leaves and cook for about 30 seconds until aromatic.
  • Add the prepared paste to the skillet and cook until the mixture becomes golden and the oil begins to separate, about 2 to 3 minutes.
  • Stir in chili powder, coriander powder, garam masala, turmeric powder, and salt, then continue cooking while stirring for another 2 to 3 minutes.
  • Add a small amount of water to create a thick gravy and bring the mixture to a gentle boil.
  • Mix in the drained chickpeas and stir well so they are evenly coated with the sauce.
  • Lower the heat to medium and cook for 5 to 7 minutes until the chickpeas are heated through and the flavors combine well.
  • Sprinkle fresh cilantro leaves on top before serving.
