Ingredients

• 2 cups oil for frying
• 30 (6 inch) corn tortillas, torn into strips
• 1/4 cup chopped onion
• 6 large eggs, lightly beaten
• 2 teaspoons salt
• 7 ounces Mexican style hot tomato sauce or salsa
• 1/2 cup water
• 1/2 cup shredded Monterey Jack cheese

Directions

  • Heat oil in a large, heavy skillet over medium heat until it reaches approximately 350°F (175°C).
  • Add the tortilla strips and chopped onion to the hot oil, frying until they turn crisp and golden, stirring frequently.
  • Remove the fried tortillas and onion, placing them on a paper towel-lined plate to drain excess oil.
  • Carefully pour out most of the oil from the skillet, leaving just a thin coating.
  • Return the fried tortillas and onion to the skillet over medium heat.
  • Stir in the beaten eggs and season with salt, cooking while stirring until the eggs are set.
  • Add the tomato sauce and water, mixing thoroughly with the tortillas and eggs.
  • Reduce the heat and simmer for about 10 minutes until the sauce thickens.
  • Sprinkle shredded Monterey Jack cheese on top and cook until the cheese melts.
