Ingredients

  • Cooking spray
  • 5 pounds chicken wings, separated at the joints with tips removed
  • 3 tablespoons hot sauce
  • Salt, to taste
  • Ground black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 cup all purpose flour

For the glaze:

  • 1/2 cup rice wine vinegar
  • 1/2 cup packed brown sugar
  • 3 garlic cloves, crushed
  • 2 tablespoons freshly minced ginger
  • 1 tablespoon Asian chili paste
  • 1 tablespoon soy sauce

Directions

  • Preheat the oven to 400°F (200°C) and cover two baking trays with aluminum foil. Lightly coat them with cooking spray.
  • Place the chicken wings in a large mixing bowl and season them with hot sauce, salt, and black pepper.
  • Add vegetable oil and toss the wings until they are evenly covered.
  • Put the wings and flour into a large food safe plastic bag and shake well until every wing is fully coated and no damp spots remain.
  • Arrange the wings on the prepared baking trays in a single layer, ensuring they are not touching. Lightly spray the wings with cooking spray.
  • Bake for 30 minutes, then turn the wings over and continue baking for another 30 minutes until they are crispy and cooked through.
  • In a saucepan, combine rice wine vinegar, brown sugar, crushed garlic, minced ginger, chili paste, and soy sauce. Heat the mixture until it reaches a boil, then remove it from the heat.
  • Place half of the baked wings in a large bowl and toss them with half of the glaze until evenly coated.
  • Transfer the glazed wings to a serving plate and allow them to rest for about 5 minutes so the sauce can soak in.
  • Repeat the same steps with the remaining wings and glaze, then serve warm.
