Ingredients
1/2 cup malt vinegar
1/4 cup plain yogurt
1 tablespoon vegetable oil
Salt, to taste
Black pepper, to taste
1 teaspoon mixed spice
1/4 teaspoon freshly ground cardamom
8 skinless boneless chicken thighs
1/2 cup tahini
1/4 cup plain yogurt
1/2 teaspoon minced garlic
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon chopped fresh parsley
4 medium tomatoes, thinly sliced
1/2 cup sliced onion
4 cups shredded lettuce
8 pita bread rounds
Directions
- Prepare all ingredients and slice the tomatoes and onions, and shred the lettuce.
- In a glass baking dish, combine malt vinegar, 1/4 cup yogurt, vegetable oil, mixed spice, cardamom, salt, and black pepper to create the marinade.
- Add the chicken thighs and turn them to coat evenly. Cover and refrigerate for at least 4 hours or overnight for best flavor.
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together tahini, 1/4 cup yogurt, minced garlic, lemon juice, olive oil, and chopped parsley to make the tahini sauce. Season with salt and pepper and refrigerate until ready to use.
- Bake the marinated chicken in the preheated oven for 30 minutes, turning once halfway through cooking.
- Uncover and continue cooking for another 5 to 10 minutes until the chicken is browned and fully cooked.
- Remove the chicken and slice it into thin strips.
- Place the chicken onto pita bread and top with tomatoes, onions, and lettuce.
- Drizzle with tahini sauce, roll the pita, and serve immediately.
