Ingredients
• 1 tablespoon chili powder
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• 1 teaspoon salt
• 1 teaspoon black pepper
• 1/4 teaspoon cayenne pepper
• 1/4 teaspoon garlic powder
• 1 1/2 pounds skinless boneless chicken breast, cut into strips
• 4 tablespoons olive oil
• 2 bell peppers, sliced
• 1 onion, thinly sliced
• 8 flour tortillas
Directions
- In a small bowl, combine chili powder, cumin, paprika, salt, black pepper, cayenne pepper, and garlic powder. Mix well to form the fajita seasoning blend.
- Place the chicken strips in a large bowl. Add two tablespoons of olive oil and sprinkle most of the seasoning mixture over the chicken. Toss until the chicken is evenly coated. Cover the bowl and place it in the refrigerator for several hours to allow the flavors to develop.
- Take the chicken out of the refrigerator about one hour before cooking so it can reach room temperature.
- Heat a large skillet over medium heat and add the remaining olive oil. Add the sliced bell peppers and onion, cooking while stirring occasionally until the vegetables become soft and slightly tender.
