Ingredients

3 tablespoons vegetable oil
3 pounds boneless, skinless chicken thighs, rinsed and patted dry
6 cloves garlic, peeled and thinly sliced
½ cup soy sauce
½ cup apple cider vinegar
½ cup water
2 tablespoons pickling spice, wrapped in cheesecloth

Directions

  • Heat vegetable oil in a large pot over medium heat until the oil becomes hot.
  • Add sliced garlic and cook for about 30 seconds until fragrant.
  • Place the chicken thighs into the pot and cook while stirring frequently until the chicken turns white on the outside. Avoid browning the chicken.
  • Pour in the soy sauce, apple cider vinegar, and water. Add the wrapped pickling spice into the pot and ensure it is submerged in the liquid.
  • Bring the mixture to a boil over medium heat.
  • Reduce the heat to low and cover the pot loosely so some steam can escape.
  • Allow the chicken to simmer for about 1 hour until it becomes very tender and absorbs the rich flavors of the sauce.
  • Remove the spice bundle, serve the chicken adobo hot, and enjoy it with steamed rice.
