Ingredients
2 teaspoons canola oil
1 pound boneless skinless chicken thighs, cut into ¾ inch pieces
3 tablespoons cornstarch, divided
¾ cup thinly sliced onion
4 garlic cloves, thinly sliced
2 teaspoons freshly minced ginger
5 cups broccoli florets
¾ cup water
¼ cup soy sauce
1 tablespoon oyster sauce
1 tablespoon light brown sugar
¼ teaspoon crushed red pepper flakes, or to taste
¼ teaspoon freshly ground black pepper
Directions
- Heat the canola oil in a large skillet over medium high heat until it becomes hot.
- Place the chicken pieces in a bowl and toss them with 1 tablespoon cornstarch until they are evenly coated.
- Add the chicken to the skillet in a single layer and cook, stirring occasionally, until the pieces are golden and fully cooked, about 6 minutes.
- Add the sliced onion and cook for about 1 minute until it begins to soften.
- Stir in the sliced garlic and minced ginger, cooking for another minute until fragrant.
- Transfer the cooked chicken mixture to a plate and set it aside temporarily.
- In the same skillet, add the broccoli florets and cook over medium high heat, stirring occasionally, for 2 to 3 minutes until they turn bright green and slightly tender.
- In a small bowl, whisk together the water, soy sauce, oyster sauce, brown sugar, crushed red pepper flakes, black pepper, and the remaining 2 tablespoons cornstarch until the mixture becomes smooth.
- Return the chicken mixture to the skillet with the broccoli.
- Pour the prepared sauce into the skillet and cook while stirring constantly until the sauce thickens and evenly coats the chicken and broccoli, about 2 minutes.
- Serve the chicken and broccoli immediately, paired with rice if desired.
