Ingredients

For the Crust

2 cups all purpose flour
1 pinch salt
1 cup shortening, chilled
½ cup cold water

For the Filling

2 cups pitted sour cherries
1¼ cups white sugar
10 teaspoons cornstarch
1 tablespoon butter
¼ teaspoon almond extract

Directions

  • In a mixing bowl, whisk together the flour and salt. Cut in the chilled shortening using two knives or a pastry blender until the mixture resembles coarse crumbs.
  • Add cold water gradually and mix by hand until the dough holds together. Divide the dough into two equal portions, form them into disks, wrap in plastic wrap, and refrigerate for 30 minutes to 1 hour.
  • Roll out one disk into an 11 inch circle and press it into a 9 inch pie dish. Place the prepared crust in the refrigerator until ready to use.
  • Roll out the second dough disk into an 11 inch circle for the top crust and keep it chilled. Preheat the oven to 375°F (190°C).
  • Place cherries, sugar, and cornstarch in a saucepan and allow the mixture to sit for about 10 minutes until the cherries begin releasing juice.
  • Cook the mixture over medium heat while stirring constantly until it begins to boil. Reduce the heat and simmer until the filling thickens and becomes glossy. Remove from heat and stir in butter and almond extract. Let the filling cool slightly.
  • Pour the cherry filling into the prepared pie crust. Cover with the top crust, seal and crimp the edges, and cut small vents on top to allow steam to escape.
  • Bake the pie in the preheated oven for 45 to 55 minutes until the crust is golden brown and the filling is bubbling. Allow the pie to cool before slicing and serving.
