Ingredients
¾ cup orange juice
½ cup lemon juice
⅓ cup lime juice
1 bunch fresh cilantro, chopped
½ cup soy sauce
4 cloves garlic, minced
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1 tablespoon ground black pepper
1 teaspoon finely chopped chipotle pepper
1 teaspoon dried oregano
½ cup olive oil
3 pounds flank steak
Directions
- In a large bowl, combine orange juice, lemon juice, and lime juice, then add cilantro, soy sauce, garlic, chili powder, cumin, paprika, black pepper, chipotle pepper, and oregano.
- Slowly whisk in the olive oil until the marinade is fully blended.
- Remove one cup of the marinade, cover it, and refrigerate for serving later.
- Place the flank steak between two sheets of plastic wrap and pound gently until about ¼ inch thick.
- Pierce the steak all over with a fork to help the marinade absorb.
- Place the steak into the marinade, ensuring it is fully coated, then cover and refrigerate for up to 24 hours.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Remove the steak from the marinade and discard the used marinade.
- Grill the steak for about 5 minutes per side for medium-rare, adjusting as needed for preferred doneness.
- Remove from the grill, rest briefly, slice against the grain, and pour the reserved marinade over the steak before serving.
