Chicken Chili Recipe
This chicken chili is a hearty and flavorful dish packed with shredded chicken, black beans, corn, tomatoes, and aromatic spices. It’s perfect for a cozy weeknight meal or a comforting lunch. The chili is easy to make, cooks quickly, and can be customized with your favorite toppings like shredded cheese, avocado, or sour cream.

Ingredients
- 2 cups shredded chicken or turkey
- 1 tablespoon olive oil or avocado oil
- 1 sweet onion, diced
- 1 red bell pepper, chopped
- 3 garlic cloves, minced
- 15 ounces diced tomatoes (1 can)
- 2 cups chicken or turkey broth
- 1 (15 oz) can black beans, rinsed and drained
- 1½ cups frozen sweet corn (or 15 oz can), rinsed and drained
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon chili flakes
- Sea salt and pepper, to taste
Optional Toppings: Shredded cheese, avocado, tortilla chips, cilantro, sour cream, Greek yogurt, sliced jalapeno
Directions
- Heat olive oil in a large pot over medium-high heat.
- Add diced onion, chopped bell pepper, and minced garlic. Sauté for 5–7 minutes until vegetables are tender.
- Stir in black beans, corn, diced tomatoes, chicken or turkey broth, shredded chicken, chili powder, cumin, oregano, and chili flakes.
- Lower the heat and simmer for 15–20 minutes, stirring occasionally, until the chili thickens and flavors meld.
- Season with sea salt and pepper to taste.
- Serve hot with optional toppings of your choice.
