Ingredients

  • 3/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 cups fresh blueberries
  • 1 (14.1-ounce) package double-crust pie pastry, thawed
  • 1 tablespoon butter

Directions

  1. Preheat oven to 375°F (190°C). Position the oven rack on the lowest level.
  2. In a large bowl, combine sugar, cornstarch, cinnamon, and salt. Sprinkle the mixture over the blueberries and gently toss until evenly coated.
  3. Line a 9-inch pie dish with one pie crust. Pour the blueberry filling into the crust and spread evenly.
  4. Dot the filling with small pieces of butter.
  5. Cut the remaining pastry into 1/2- to 3/4-inch strips and weave a lattice top over the filling. Crimp and seal the edges.
  6. Bake on the lowest oven rack for about 50 minutes, or until the filling is bubbling and the crust is golden brown.
  7. Remove from the oven and allow the pie to cool completely before slicing to ensure the filling sets properly.
