Ingredients

  • 3 1/2 pounds beef bones
  • 2 stalks celery, cut into 2-inch pieces
  • 1 large onion, cut into 8 pieces
  • 1 medium leek, cleaned and cut into 2-inch pieces
  • 1 whole head garlic, halved crosswise
  • 12 cups water, or enough to fully cover
  • 2 bay leaves
  • 1 tablespoon white vinegar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Directions

  1. Preheat the oven to 450°F (230°C) and line a baking sheet with foil.
  2. Arrange the beef bones in a single layer on the prepared baking sheet. Roast for about 40 minutes, turning halfway through, until deeply browned.
  3. Transfer the roasted bones to a large stockpot, including any browned bits and juices from the pan.
  4. Add celery, onion, leek, and garlic to the pot. Pour in enough water to completely cover the bones and vegetables.
  5. Stir in bay leaves, vinegar, salt, and black pepper.
  6. Bring the mixture to a boil over medium-high heat, then reduce to a very gentle simmer. Partially cover and simmer for about 12 hours. Skim off any foam that rises to the surface and add more water if needed to keep ingredients submerged.
  7. Remove from heat and allow the broth to cool slightly. Strain through a fine-mesh sieve into a clean pot or storage containers, discarding the solids.
  8. Let the broth cool completely before refrigerating or freezing.
