Ingredients

  • 1 tablespoon olive oil
  • 3 skinless, boneless chicken breasts
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 5 ¼ cups chicken broth
  • 3 cans (15 oz each) cannellini beans, rinsed and drained
  • 2 cans (4 oz each) chopped green chiles
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • Pinch of cayenne pepper, or to taste
  • Salt, to taste
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded Monterey Jack cheese

Directions

  • Heat olive oil in a large pot or Dutch oven over medium heat, then add the chicken, onion, and garlic. Cook until the chicken browns on both sides.
  • Transfer the chicken to a cutting board and cut it into bite-size pieces.
  • Return the chicken to the pot and add the chicken broth, cannellini beans, green chiles, oregano, cumin, and cayenne pepper.
