Ingredients
- 1 tablespoon olive oil
- 3 skinless, boneless chicken breasts
- 1 large onion, chopped
- 2 cloves garlic, minced
- 5 ¼ cups chicken broth
- 3 cans (15 oz each) cannellini beans, rinsed and drained
- 2 cans (4 oz each) chopped green chiles
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- Pinch of cayenne pepper, or to taste
- Salt, to taste
- ¼ cup chopped fresh cilantro
- ½ cup shredded Monterey Jack cheese
Directions
- Heat olive oil in a large pot or Dutch oven over medium heat, then add the chicken, onion, and garlic. Cook until the chicken browns on both sides.
- Transfer the chicken to a cutting board and cut it into bite-size pieces.
- Return the chicken to the pot and add the chicken broth, cannellini beans, green chiles, oregano, cumin, and cayenne pepper.
- Bring to a gentle simmer and cook for 30–40 minutes until the chicken is tender and the chili thickens.
- Taste and adjust the seasoning with salt.
