  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 cup low-sodium soy sauce
  • 1/2 cup white sugar
  • 1/4 cup mirin (Japanese sweet wine)
  • 4 teaspoons grated fresh ginger
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 4 skinless, boneless chicken breast halves

Directions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, whisk together the cornstarch and water until smooth, then set the mixture aside.
  • Place a saucepan over medium heat and combine soy sauce, sugar, mirin, grated ginger, minced garlic, and red pepper flakes. Stir the mixture and cook until it begins to simmer.
  • Slowly whisk the cornstarch mixture into the sauce. Bring it to a gentle boil, then reduce the heat to medium-low and simmer for about 10 minutes, stirring frequently until the sauce thickens.
