Ingredients

  • 8 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and ground black pepper, to taste
  • 2 (12 ounce) New York strip steaks
  • 12 whole garlic cloves, peeled
  • 1 cup olive oil (for roasting garlic)
  • 1 ½ tablespoons balsamic vinegar

Directions

  1. In a small bowl, whisk together the minced garlic, 1 tablespoon olive oil, salt, and black pepper to create a marinade.
  2. Place the steaks in a resealable plastic bag and pour the marinade over them. Seal and refrigerate for 8 hours or overnight.
  3. In a small saucepan, combine the 12 whole garlic cloves and 1 cup olive oil. Cook over low heat for about 30 minutes until the garlic is golden and tender. Set aside.
  4. Preheat a grill to high heat and lightly oil the grates.
  5. Remove the steaks from the marinade and pat dry with paper towels. Discard the used marinade and season the steaks generously with salt and black pepper.
  6. Grill the steaks for about 5 minutes per side for medium-rare, or until the internal temperature reaches 130°F (54°C).
  7. Transfer the steaks to a plate and let rest for 5 minutes.
  8. Drizzle balsamic vinegar over the steaks and top with roasted garlic cloves before serving.
