Ingredients
700g small potatoes, about 12 to 14, or 1 to 1.2kg medium potatoes
1 tablespoon salt, for boiling
2 tablespoons unsalted butter, melted
1 tablespoon olive oil
3/4 teaspoon salt, for sprinkling
1/4 teaspoon black pepper
Finely chopped parsley, optional
Directions
- Bring a large pot of water to a boil and add 1 tablespoon of salt. Add the potatoes and cook until fork tender. Small potatoes take about 20 to 25 minutes, while medium potatoes take around 30 minutes.
- Preheat the oven to 200°C / 390°F (180°C fan).
- Drain the potatoes and allow them to steam dry in a colander for about 5 minutes.
- Arrange the potatoes on a baking tray. Using a fork or potato masher, gently press down on each potato until flattened but still intact. Thinner potatoes will turn extra crispy, while thicker ones will remain fluffier inside.
- Let the smashed potatoes rest on the tray for another 5 minutes to steam dry for better crispiness.
- Drizzle the melted butter evenly over the potatoes, followed by olive oil. Sprinkle with salt and black pepper.
- Bake for 45 minutes if using small potatoes or 55 minutes for medium potatoes, until deeply golden and crispy. Avoid flipping during baking to maintain crisp edges.
