Roast Beef Recipe

Ingredients

  • 2 teaspoons olive oil
  • 4 pounds boneless chuck roast
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  • Preheat the oven to 325°F (165°C).
  • Heat olive oil in a large Dutch oven or heavy pot over medium high heat. Place the chuck roast in the pot and sear it for about 4 minutes. Turn the meat with tongs and sear the other side for another 3 to 4 minutes until it becomes browned. Remove the roast from the pot.
  • Place the chopped onion, minced garlic, and one bay leaf in the bottom of the pot. Sprinkle with salt and black pepper.
  • Return the seared roast to the pot and place the remaining bay leaf on top of the meat. Cover the pot with a lid.
  • Cook in the preheated oven for about 30 minutes.
  • Reduce the oven temperature to 300°F (150°C) and continue cooking for about 1 1/2 hours or until the roast becomes tender. The internal temperature of the beef should reach about 145°F (65°C).
  • Remove the roast from the oven and allow it to rest for 10 to 15 minutes before slicing.
  • Serve warm with the juices from the pot.
