Ingredients
For the Rub / Sauce:
- 1 tsp Worcestershire sauce
- 2 tbsp ketchup
- 1 tbsp soy sauce
- 2 tbsp brown sugar (or white)
- 1 tbsp olive oil (or vegetable or canola oil)
- 1 clove garlic, minced
- 2 tsp apple cider vinegar
For the Pork Chops:
- 4 pork chops or cutlets (200–250g / 7–8oz each, bone-in preferred)
- 800g (1.6 lb) baby potatoes, halved if large
- 1 tbsp olive oil
- Salt and pepper to taste
Directions
- Preheat the oven to 220°C / 430°F (standard) or 200°C / 390°F (fan-forced).
- Toss the baby potatoes in olive oil, then season with salt and pepper. Spread them evenly on a baking tray and bake for 15 minutes to give them a head start.
- In a small bowl, mix all rub ingredients until smooth.
- Remove the tray from the oven and push the potatoes to the sides.
- Slather both sides of the pork chops with the rub, reserving some for later basting.
- Place the pork chops on the tray and bake for 15 minutes.
- Switch the oven to broil/grill mode (high heat, rack about 8 inches from the source).
- Flip the chops, spoon over the remaining rub, and broil for 7–10 minutes until caramelized and golden.
- Brush the pork with the juices from the tray, then broil for another 2 minutes for extra color and flavor.
- Serve warm, drizzling the remaining pan juices over the chops and potatoes.
