Polenta Recipe

Ingredients
- 4 cups water
- 1 teaspoon fine salt
- 1 cup polenta
- 3 tablespoons butter, divided
- 1/2 cup freshly grated Parmigiano-Reggiano cheese, plus more for garnish
Directions
- Bring the water and salt to a boil in a large saucepan over medium high heat.
- Slowly pour the polenta into the boiling water while whisking constantly to prevent lumps.
- Reduce the heat to low and allow the mixture to simmer while whisking often until the polenta begins to thicken, about 5 minutes.
- Cover the saucepan and cook for about 30 minutes, stirring every 5 to 6 minutes. When the mixture becomes too thick to whisk, use a wooden spoon to stir.
- Continue cooking until the polenta becomes creamy and the grains are tender.
- Turn off the heat and gently stir in 2 tablespoons of butter until it begins to melt.
- Add the grated Parmigiano-Reggiano cheese and stir until the cheese melts and blends smoothly with the polenta.
- Cover and let the polenta rest for about 5 minutes so it thickens slightly.
- Transfer to a serving bowl and top with the remaining butter and additional grated cheese if desired.
