Ingredients
1 pound dried pinto beans, rinsed
4 cups water, or as needed
2 (10 ounce) cans diced tomatoes with green chile peppers
1/2 pound bacon, cut into small pieces
1 yellow onion, chopped
1 tablespoon chili powder
1 tablespoon ground cumin
1 1/2 teaspoons garlic powder
1/2 bunch fresh cilantro, chopped
Salt to taste
Directions
- Place the rinsed pinto beans in a large pot and cover them with water by about 2 to 3 inches.
- Let the beans soak overnight, then drain and rinse them well.
- Return the beans to the pot and add fresh water to fully cover them.
- Stir in the diced tomatoes, bacon, chopped onion, chili powder, cumin, and garlic powder.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 3 hours.
- Stir occasionally and add more water as needed to keep the beans submerged.
- Add the chopped cilantro and salt, then continue cooking for another hour, or until the beans are tender.
- Serve hot.
