Ingredients

1 cup white sugar, divided
1 tablespoon cornstarch
3 large egg whites, at room temperature
1 teaspoon lemon juice
1 1/4 cups heavy whipping cream
1/2 cup confectioners’ sugar
1 pint fresh strawberries, hulled and sliced

Directions

  • Preheat the oven to 300°F (150°C) and prepare a baking sheet with parchment paper, drawing a 9-inch circle as a guide.
  • In a small bowl, combine 1/4 cup of sugar with the cornstarch.
  • In a clean mixing bowl, beat the egg whites until soft peaks begin to form.
  • Gradually add the remaining sugar while continuing to beat until the mixture becomes thick, glossy, and forms stiff peaks.
  • Carefully fold in the cornstarch mixture and lemon juice until just combined.
  • Spread the meringue onto the prepared baking sheet, shaping it into a circle with slightly raised edges.
  • Bake for 1 hour, then turn off the oven and allow the meringue to rest inside for 30 minutes without opening the door.
  • Remove from the oven and let it cool completely.
  • Whip the heavy cream with confectioners’ sugar until stiff peaks develop.
  • Spread the whipped cream over the cooled meringue and top with sliced strawberries.
