Ingredients
1 pound lean ground beef
1 tablespoon olive oil
1 small onion, finely diced
1 stalk celery, chopped
1 carrot, diced
1 teaspoon minced garlic
1 (32 ounce) bottle tomato-vegetable juice cocktail
1 (14 ounce) can chicken broth
1 tablespoon dried parsley
1 tablespoon dried basil
1 teaspoon dried oregano
Freshly ground black pepper to taste
1 1/2 cups ditalini pasta
1 (15 ounce) can cannellini beans, drained and rinsed
Directions
- Heat a large skillet over medium-high heat and cook the ground beef until it is browned and crumbly.
- Remove the beef with a slotted spoon and set aside to drain excess fat.
- Using the same skillet, heat the olive oil and sauté the onion, celery, and carrot until they soften.
- Add the garlic and cook briefly until fragrant.
- Stir in the tomato-vegetable juice, chicken broth, parsley, basil, oregano, and black pepper.
- Bring the mixture to a gentle boil, then lower the heat and let it simmer for about 20 minutes.
- While the soup simmers, cook the ditalini pasta in salted boiling water until tender, then drain.
