  • 6 ounces Pad Thai rice noodles
  • ¾ pound bean sprouts

For the Eggs

  • 4 eggs
  • 1 pinch salt

For the Pad Thai Sauce

  • 3 tablespoons lime juice
  • 3 tablespoons ketchup (an easy substitute when tamarind is unavailable)
  • 1 tablespoon brown sugar
  • ¼ cup fish sauce
    • For vegan version: substitute fish sauce with soy sauce or tamari

For Stir Frying

  • 3 tablespoons peanut oil
  • 1 tablespoon minced garlic

  • 2 cups grated carrots
  • ⅔ cup chopped peanuts

Directions

Prepare the Bean Sprouts & Noodles

Bring a pot of water to a boil. Add bean sprouts and blanch for 30 seconds, then drain.
Once the water returns to a boil, add rice noodles. Cook 3–5 minutes until tender. Drain and rinse with cold water.

Prepare the Eggs
