Ingredients
1/4 cup unsalted butter
2 (16 ounce) packages sliced fresh mushrooms
1 pinch salt
1 medium yellow onion, diced
1 1/2 tablespoons all-purpose flour
4 cups chicken broth, or more if needed
1 cup water, or more if needed
6 sprigs fresh thyme, tied together
2 cloves garlic, peeled
1 cup heavy cream
Salt and freshly ground black pepper to taste
1 teaspoon fresh thyme leaves for garnish
Directions
- Melt the butter in a large pot over medium-high heat.
- Add the mushrooms along with a pinch of salt and cook until they release their natural juices.
- Lower the heat to medium-low and continue cooking until the liquid evaporates and the mushrooms become golden and caramelized.
- If desired, set aside a few mushroom slices for garnishing.
- Add the diced onion and cook until soft and lightly golden.
- Sprinkle in the flour and cook for about 2 minutes, stirring to remove any raw flour taste.
- Pour in the chicken broth and water, then add the thyme bundle and garlic cloves. Allow the soup to simmer gently for about 1 hour.
- Remove and discard the thyme bundle.
- Blend the soup in batches until smooth and creamy.
- Return the soup to the pot, stir in the cream, and adjust the consistency with additional broth or water if needed.
- Season with salt and freshly ground black pepper to taste.
- Serve warm, topped with the reserved mushrooms and fresh thyme leaves.
