Jerk Chicken Recipe

The jerk chicken recipe is a flavorful Caribbean dish known for its bold spices, smoky aroma, and spicy kick. Originating from Jamaica, jerk chicken is traditionally marinated in a mixture of herbs, spices, citrus juice, and hot peppers before being grilled to perfection. The result is tender, juicy chicken with a rich and fiery flavor that makes it a favorite in many cuisines around the world.

What makes this dish special is the signature jerk marinade. It combines ingredients such as allspice, thyme, garlic, ginger, and hot peppers to create a deep and complex flavor profile. The marinade not only seasons the chicken but also helps keep it moist and tender while cooking. After marinating, the chicken is usually grilled slowly so it absorbs the smoky flavor and develops a slightly charred exterior. Discover more flavors with recipes like Jerk Chicken Recipe.

Ingredients

6 skinless, boneless chicken breast halves, cut into chunks
1 cup water
Juice of 4 limes
2 tablespoons vegetable oil
2 teaspoons ground allspice
2 teaspoons dried thyme
1 ½ teaspoons ground black pepper
1 teaspoon salt
1 teaspoon brown sugar
1 teaspoon ground ginger
½ teaspoon ground nutmeg
2 onions, chopped
1 ½ cups chopped green onions
2 habanero peppers, chopped
6 cloves garlic, chopped

Directions

  • Place the chicken pieces in a medium bowl. Pour in the water and lime juice to lightly soak the chicken and help tenderize it.
  • In a blender, combine the vegetable oil, allspice, thyme, black pepper, salt, brown sugar, ginger, and nutmeg. Blend the mixture until it becomes well combined.
  • Add the chopped onions, green onions, habanero peppers, and garlic to the blender. Blend again until the marinade becomes almost smooth but still slightly textured.
  • Pour most of the marinade over the chicken, reserving a small amount to use for basting while cooking. Mix the chicken well so that every piece is evenly coated.
  • Cover the bowl and place it in the refrigerator. Allow the chicken to marinate for at least 2 hours so the flavors can fully develop.
  • Preheat an outdoor grill to medium heat and lightly oil the grill grates to prevent sticking.
  • Place the marinated chicken on the grill and cook slowly. Turn the chicken frequently and baste it with the reserved marinade during cooking.
  • Continue grilling until the chicken is fully cooked, no longer pink in the center, and the juices run clear. The internal temperature should reach 165°F (74°C).
  • Remove the chicken from the grill and serve warm.
