Ingredients
- 1 cup long-grain white rice
- 2 quarts hot water
- ½ cup white sugar (adjust to taste)
- 1½ teaspoons ground cinnamon
- 1 cup milk (use almond or oat milk for vegan horchata)
- Ice cubes, for serving
Directions
- Add rice, sugar, and cinnamon to the hot water in a large bowl or pitcher and stir until the sugar dissolves completely.
- Cover and soak the mixture at room temperature for at least 3 hours, or preferably overnight, to allow the rice and cinnamon to fully infuse the water.
- Blend the mixture by adding the soaked rice water and milk to a blender, then blend until the rice breaks down into very fine particles and the liquid looks milky.
- Strain thoroughly using a fine-mesh strainer or several layers of cheesecloth to remove rice solids and achieve a smooth texture.
