Ingredients
- 4 cups milk
- 1 teaspoon ground cinnamon
- 5 whole cloves
- 2 ½ teaspoons vanilla extract, divided
- 12 large egg yolks
- 1 ½ cups white sugar
- 4 cups light cream
- 2 ½ cups light rum (optional)
- ½ teaspoon ground nutmeg
Directions
- Combine milk, cinnamon, cloves, and ½ teaspoon vanilla in a saucepan over low heat. Warm for 5 minutes.
- Increase heat to medium-low and bring just to a boil, then remove from heat.
- Whisk egg yolks in a large bowl until pale. Add sugar and whisk until thick and fluffy.
- Slowly pour the hot milk mixture into the egg mixture while whisking continuously to temper the eggs.
- Return mixture to the saucepan and cook over medium heat, stirring constantly, until thickened (about 3 minutes). Do not boil.
- Strain to remove the cloves, cool for 1 hour, then stir in cream, remaining vanilla, nutmeg, and rum if using.
- Refrigerate 8 hours to overnight before serving.
