Ingredients
• 2 tablespoons olive oil
• 1 large onion, chopped
• 2 cloves garlic, minced
• 2 pounds lean ground beef
• 2 cans kidney beans, rinsed and drained
• 1 can diced tomatoes
• 1 can tomato purée
• 1 cup water
• 1 can chopped green chile peppers
• 2 tablespoons chili powder
• 2 teaspoons salt
• 2 teaspoons ground cumin
• 1 teaspoon ground black pepper
Directions
Heat olive oil in a skillet over medium heat and cook the chopped onion and garlic until the onion becomes soft and translucent.
Add the ground beef to the skillet and cook until it is fully browned, breaking it apart while cooking.
Transfer the cooked beef mixture into a slow cooker.
Add kidney beans, diced tomatoes, tomato purée, water, and chopped green chile peppers to the slow cooker.
Stir in chili powder, salt, cumin, and black pepper until everything is well combined.
Cover the crockpot and cook on low heat for about 4 to 6 hours so the flavors develop and the chili thickens.
