Ingredients

  • 1½ cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ cup all purpose flour
  • 2 eggs, whisked
  • 600 g chicken tenderloins
  • Olive oil spray

Garlic Butter

  • 50 g unsalted butter, melted
  • 1 teaspoon freshly minced garlic
  • ¼ teaspoon sea salt
  • 1 tablespoon finely chopped parsley
  • ¼ cup freshly grated parmesan cheese

Creamy Garlic Herb Sauce

  • ½ cup mayonnaise
  • ⅓ cup Greek yogurt or sour cream
  • ½ teaspoon minced garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped chives
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Directions

  • Preheat the oven to 220°C and allow it to fully heat before baking. If using an air fryer, preheat to 200°C.
  • In a bowl, combine the panko breadcrumbs, garlic powder, paprika, salt, and pepper.
  • Place flour in one bowl and whisked eggs in another bowl.
  • Coat each chicken tenderloin in flour, dip into the egg, then press into the breadcrumb mixture until fully coated.
  • Arrange the coated chicken on a lightly oiled tray or rack, leaving space between each piece. Lightly spray the tops with olive oil.
  • Bake for 16 to 18 minutes, flipping halfway through, until golden and cooked through. If air frying, cook for 10 to 12 minutes, flipping halfway.
  • In a small bowl, mix melted butter, garlic, salt, and parsley.
  • Once the chicken is cooked, brush generously with the garlic butter and immediately sprinkle parmesan over the top.
  • In another bowl, mix all sauce ingredients until smooth.
  • Serve the chicken tenderloins hot with the creamy garlic herb sauce.
