Ingredients
- 4 skinless, boneless chicken breast halves
- Salt and freshly ground black pepper, to taste
- 2 large eggs
- 1 cup panko bread crumbs (or more as needed)
- ¾ cup grated Parmesan cheese, divided
- 2 tablespoons all-purpose flour (or more if needed)
- ½ cup olive oil, for frying
- ½ cup prepared tomato sauce
- ¼ cup fresh mozzarella, cut into small cubes
- ¼ cup chopped fresh basil
- ½ cup grated provolone cheese
- 2 teaspoons olive oil
Directions
- Preheat the oven to 450°F (230°C).
- Place chicken breasts between two sheets of plastic wrap and pound until ½ inch thick for even cooking.
- Season both sides of the chicken with salt and pepper, then lightly coat with flour.
- In a shallow bowl, beat the eggs. In another bowl, combine panko bread crumbs with ½ cup grated Parmesan.
- Dip each chicken breast first into the eggs, then into the breadcrumb mixture, pressing firmly to coat both sides.
- Let the breaded chicken rest for 10–15 minutes to help the coating stick.
- Heat ½ inch of olive oil in a skillet over medium-high heat. Fry chicken for about 2 minutes per side, until golden brown.

- Top with mozzarella, provolone, fresh basil, and the remaining Parmesan cheese.
- Drizzle each breast lightly with olive oil.
- Bake for 15–20 minutes, until the cheese is bubbly and lightly browned and the chicken reaches an internal temperature of 165°F (74°C).
