- 2 cloves garlic, minced

- 2 cups reduced-sodium beef broth
- 1 cup dry red wine
- 1 pound carrots, sliced diagonally ½-inch
- 2 tablespoons all-purpose flour
- ½ cup chopped fresh flat-leaf parsley
Directions
- Season the beef cubes with salt and pepper and set aside.
- In a Dutch oven over medium-high heat, cook the bacon until the fat renders and it begins to brown, about 7–8 minutes.
- Add the beef to the bacon and cook, stirring often, until browned on all sides, about 7–8 minutes.
- Add the onion and cook until softened, 2–3 minutes. Stir in the garlic and cook for 1 minute.
- Add the mushrooms and tomato paste, cooking while stirring occasionally for 4 minutes.
- Pour in the beef broth and red wine, then add the carrots. Bring the mixture to a boil, then reduce the heat to low. Cover and cook for 40–45 minutes, or until the beef is fork-tender.
- Uncover and remove ½ cup of broth into a separate cup. Whisk in the flour until smooth, then stir it back into the beef mixture. Cook, stirring constantly, for 4–5 minutes until slightly thickened.
- Sprinkle with fresh parsley and serve immediately over noodles, mashed potatoes, or bread.
