Ingredients

  • 2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 4 slices thick-cut hickory smoked bacon, cut into small cubes
  • 1 medium white onion, diced ½-inch
  • 2 cloves garlic, minced
  • 1 (8 ounce) package sliced baby portobello mushrooms
  • 2 tablespoons tomato paste
  • 2 cups reduced-sodium beef broth
  • 1 cup dry red wine
  • 1 pound carrots, sliced diagonally ½-inch
  • 2 tablespoons all-purpose flour
  • ½ cup chopped fresh flat-leaf parsley

Directions

  1. Season the beef cubes with salt and pepper and set aside.
  2. In a Dutch oven over medium-high heat, cook the bacon until the fat renders and it begins to brown, about 7–8 minutes.
  3. Add the beef to the bacon and cook, stirring often, until browned on all sides, about 7–8 minutes.
  4. Add the onion and cook until softened, 2–3 minutes. Stir in the garlic and cook for 1 minute.
  5. Add the mushrooms and tomato paste, cooking while stirring occasionally for 4 minutes.
  6. Pour in the beef broth and red wine, then add the carrots. Bring the mixture to a boil, then reduce the heat to low. Cover and cook for 40–45 minutes, or until the beef is fork-tender.
  7. Uncover and remove ½ cup of broth into a separate cup. Whisk in the flour until smooth, then stir it back into the beef mixture. Cook, stirring constantly, for 4–5 minutes until slightly thickened.
  8. Sprinkle with fresh parsley and serve immediately over noodles, mashed potatoes, or bread.
