Ingredients

  • 2 tablespoons brown sugar
  • 2 large cloves garlic, chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 10 chicken drumsticks
  • 2 tablespoons vegetable oil
  • ½ cup finely chopped onion
  • ¾ cup ketchup
  • 2 tablespoons white wine vinegar
  • 2 tablespoons Worcestershire sauce

Directions

  • In a bowl or mortar, mash together the brown sugar, chopped garlic, salt, and black pepper until a thick paste forms.
  • Place the paste into a resealable plastic bag and add the chicken drumsticks. Coat the chicken thoroughly with the mixture, remove excess air, and seal the bag. Refrigerate for at least 1 hour or overnight for deeper flavor.
  • When ready to cook, heat vegetable oil in a saucepan over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  • Stir in ketchup, white wine vinegar, and Worcestershire sauce. Simmer for about 10 minutes until the sauce thickens and flavors combine.
  • Preheat an outdoor grill to medium heat and lightly oil the grill grate.
  • Place the chicken on the grill and cook for 3 to 5 minutes on each side until lightly browned.
  • Move the chicken to indirect heat and maintain the grill temperature between 300°F and 350°F (150°C to 175°C).
  • Cook the chicken for about 20 minutes, turning halfway through. Brush with the prepared barbecue sauce and continue cooking, basting every 10 minutes.
  • Cook until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear.
  • Serve the barbecue chicken hot with extra sauce if desired.
