Ingredients
- 2 tablespoons brown sugar
- 2 large cloves garlic, chopped
- 2 teaspoons salt
- 1 teaspoon black pepper
- 10 chicken drumsticks
- 2 tablespoons vegetable oil
- ½ cup finely chopped onion
- ¾ cup ketchup
- 2 tablespoons white wine vinegar
- 2 tablespoons Worcestershire sauce
Directions
- In a bowl or mortar, mash together the brown sugar, chopped garlic, salt, and black pepper until a thick paste forms.
- Place the paste into a resealable plastic bag and add the chicken drumsticks. Coat the chicken thoroughly with the mixture, remove excess air, and seal the bag. Refrigerate for at least 1 hour or overnight for deeper flavor.
- When ready to cook, heat vegetable oil in a saucepan over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
- Stir in ketchup, white wine vinegar, and Worcestershire sauce. Simmer for about 10 minutes until the sauce thickens and flavors combine.
- Preheat an outdoor grill to medium heat and lightly oil the grill grate.
- Place the chicken on the grill and cook for 3 to 5 minutes on each side until lightly browned.
- Move the chicken to indirect heat and maintain the grill temperature between 300°F and 350°F (150°C to 175°C).
- Cook the chicken for about 20 minutes, turning halfway through. Brush with the prepared barbecue sauce and continue cooking, basting every 10 minutes.
- Cook until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear.
- Serve the barbecue chicken hot with extra sauce if desired.
