Ingredients

- 56 ounces crushed tomatoes (two 28-ounce cans, with juice)
- 2 cups chicken stock or vegetable broth
- ¼ cup chopped fresh basil (plus more for garnish)
- 1 tablespoon sugar (to balance acidity)
- ½ teaspoon black pepper
- ½ cup heavy cream
- ⅓ cup freshly grated Parmesan cheese
Directions
- Melt butter in a large non-reactive pot over medium heat. Add chopped onions and sauté for 10–12 minutes until soft and golden.
- Stir in minced garlic and cook for another minute until fragrant.
