Ingredients
- 500g mascarpone cheese
- 4 fresh eggs, separated
- 100–110g caster sugar
- 300ml espresso or strong black coffee
- 300g ladyfingers (Savoiardi)
- Unsweetened cocoa powder, for dusting
Directions
- Prepare a strong espresso or black coffee and let it cool completely. Avoid adding sugar since the dessert already has sweetness from the mascarpone and ladyfingers.
- Separate the egg yolks and whites into two different bowls.
- Using an electric mixer, beat the egg yolks with sugar until thick, pale, and doubled in volume. This usually takes about 4–5 minutes.
- Add mascarpone to the yolk mixture and gently combine until smooth and creamy. Avoid overmixing to keep the cream fluffy.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Carefully fold the whipped egg whites into the mascarpone mixture using a spatula, mixing gently from bottom to top until evenly combined.
- Spread a thin layer of mascarpone cream on the bottom of your serving dish.
- Quickly dip each ladyfinger into the cooled coffee for about 1 second per side and arrange them over the cream layer.
- Add a layer of mascarpone cream on top of the soaked ladyfingers, then repeat the process until all ingredients are used. Finish with a layer of mascarpone cream on top.
- Dust the top generously with unsweetened cocoa powder.
- Refrigerate the tiramisu for at least 5 hours (preferably overnight) before serving to let the flavors blend beautifully.
